Spontaneously fermented barrel aged golden ale. This homage to the great beers of Lambic is a single vintage, 24 month Marsala-barrel aged golden ale, brewed and inoculated with our coolships in Windham County, Vermont, in the Spring of 2017. Blended and released in Summer of 2019, this gorgeous testament to our terroir and region’s wild yeast has cellared beautifully, with notes of pecan and stonefruits emerging over time as the straw-sunbeam funk mellows out. 5.9%abv.
And yes, it’s true. We’ve never purchased commercial yeast. Every single one of our beers are fermented with Brattleboro wild mixed culture yeasts, grown from our coolships. That’s why Hermit Thrush cans are always totally wild.
