70% Chardonnay, 30% Mauzac grown in the Languedoc region and bottled under Vin de France. Vines are 16-21 years old grown in Marl soils rich in small Turritella fossils rested on a bed of marine limestone, sitting at 400-600 meters-above-sea-level.
Grapes were hand harvested, organically farmed, with direct pressing of whole bunches followed by one night of cold settling. The juice is racked off of the heavy lees into concrete vats where fermentation takes place using only indigenous yeasts. The Chardonnay goes through full malo-lactic fermentation while the Mauzac does not. The wine is aged 6 months in concrete prior to bottling.
