60% Carignan, 40% Cinsault from the Languedoc region of France, bottled under Vin de France. The vines are 35-56 years old, grown on chalky clay soils at 300 meters-above-sea-level.
Grapes are hand harvested, crushed, and macerated separately. Fermented with indigenous yeasts entirely in concrete vats. The Carignan is pressed after one day of maceration and the Cinsault after five days. The wine is aged five months in concrete prior to bottling.
Organically farmed with super low levels of sulfur (37ppm).
