This sparkling fruit wine is a true testament to exploring new boundaries in Virginia cider and trusting one’s intuition as a guiding light. The wine initially started as a co-fermentation of Vidal Blanc from Sherman Ridge Vineyard in the Shenandoah Valley and Bartlett pears from Dickie Brothers Orchard in Nelson County. The grapes were crushed by foot, left whole cluster to soak for 24 hours. The pears were pressed in unison with the Vidal, directly to neutral french oak. Upon nearly completing a native primary fermentation, an extended maceration plum wine was added, allowing for the two wines to marry for several months.

In March of the following year, we pressed a bin of Goldrush apples held over from the fall. The cider began a native fermentation in demijohns before being added to the above mentioned wine and quickly bottled. The result is something in between a traditional and ancestral method sparkling wine. The goal was to further eliminate outside additions of any sort, excluding the use of non-fruit sugars and laboratory yeasts in our tirage to perform bottle conditioning. We roughly hand disgorged the wine in July, with no SO2 added at any point in the making of this wine. The result is a intensely flavorful rosé where all fruits contribute in their own ways; the Vidal providing the depth and backbone of the wine, the pears contributing texture, the plums heightening the aromatics and acidity, and the apples providing the natural carbonation.

This fruit wine is part of a new series of ciders that will not be replicated in the future but rather offer a fleeting snapshot of converging, creative energy in the cellar. The label artwork is derived from the ever inspiring book The Valley Road by Fay Ingalls, a look back into the golden years of Virginia Hot Springs. Each chapter’s artwork, drawn by Margaret Lowengrund, depicts a landscape or scene from varying places within the Warm Springs Valley.
