In many agricultural pursuits, a romantic notion eventually meets with a practical reality. For us, farmhouse and monastic brewing traditions from France and Belgium offer a compass. Repurpose old barns to brew. Find a water source in the earth. Grow our grain. Capture yeast from the land. While our pursuit follows a familiar path, the result reflects its place and can only be something else altogether.
Brewed this past spring and open fermented in our Corn Crib loft. The ale then barrel conditioned for two months before returning upstairs to bottle condition for another two months.
A sturdy malt foundation, gentle floral hop impression, and expressive esters blend in harmony. The ale finishes dry and effervescent, thanks to our estate-captured wild yeast.
